Sourdough Banana Muffin Recipe

 

Arnold's very first bake was a clean-out-the-freezer bake. I had these really, really old bananas in the freezer. Like I-hope-I-don't-get-sick bananas because these are I-don't-know-how-long-these-have-been-in-here bananas. But they turned out great!


⅓ cup veg oil
¾ cup white sugar
1 tsp vanilla
1 egg
3 bananas
1 cup sourdough discard
1.5 cup flour
¼ tsp salt
1 tsp baking powder
½ tsp baking soda


Combine veg oil, sugar.
Combine vanilla, egg. Combine with above.
Combine with mashed bananas, sourdough discard.
Combine flour, salt, baking powder, baking soda. Add to wet ingredients above.
Heat oven to 350°F.
Fill muffin tins almost to top. Bake for 25-30min.
